Lemon Basil Mayo

brittynelewis

This recipe is almost too simple to be so good. It might blow your mind. This particular mayo is the secret weapon behind a couple of my recipes. Without this mayo, my chicken sandwiches and lettuce wedges just wouldn't be the same. I've got the ratios below just right so you can use as a spread, dip, or dressing - details matter on this one. This is a "go to" for almost everything in my house. And it's so easy for kids to do or help with. It makes my kiddo extra eager to eat it with her veggies!

Lemon Basil Mayo

makes 1/2 cup

1/2 cup real mayo (homemade, Hellmann's, or a local aioli)

2 tablespoons basil, finely chopped

1 teaspoon fresh squeezed lemon juice

1/4 teaspoon salt

1/8 teaspoon fresh cracked pepper

Combine all the ingredients in a small bowl and stir to combine. Taste for seasonings. Use the mayo on your favorite sandwich, or use as a dip for fresh veggies.

My family and I like this mayo for...

  • Dip for fried green tomatoes

  • Spread on chicken sandwiches

  • Spread/dressing over a lettuce wedge

  • Dip for fresh veggies (my kiddos love this instead of ranch!)

  • Open face tomato sandwiches (this is killer!)
